How many times did you want to make pizza but changed your mind only because of the dough? I did it many times for this very reason until one day when I came across an interesting combination of dough and dried herbs. Since that day, my whole idea of making pizza has had an unexpected turn.
How it’s done
Mix 3 cups of flour with 1 1/2 cup of hot water and 10 gr of yeast, which have first been dipped in one-tablespoon of milk and one-teaspoon of sugar.
½ teaspoon salt
1 teaspoon dry oregano
1 teaspoon basil
3 teaspoons olive oil
Knead the dough with your hands for 15 minutes and then let it rest in a warm place for one hour. When time is up, the dough is ready for pizza. If you don’t use the entire dough at one time, you can keep it fresh in a Vacuvita container for about 3 to 5 days (in the refrigerator) and up to 3 months (in the freezer).
From the big dough you can get 5 medium tops. What to put on it? Whatever you like… even pineapple. It is only important that the combined ingredients fit each other. The rest is up to your imagination.
Lots of pizza types require tomato sauce. As it is still summer and you can still find fresh tomatoes, we recommend to make the sauce at home. You will need 10 medium chopped tomatoes, which you will boil for 20 minutes with a mixture of oregano, basil, garlic, thyme, pepper and salt. All the seasonings can be added by taste.
Now that you have the main parts already prepared, it’s time to decide what to put on top. We have a few suggestions.
Coat the top with a generous layer of tomato sauce and simply add mozzarella and fresh basil.
Pear and gorgonzola
As the name suggests, you need pears and gorgonzola. Alternate pieces of each on the top and spread a handful of walnuts over it.
If you want to combine cheese on your pizza top, add a teaspoon of cumin in the dough. Coat the top with mozzarella, cheddar, parmesan and rucola.
Whatever type you choose to prepare, place the pizza in the oven after adding all the ingredients at a maximum of 250 degrees Celsius for 15-25 minutes. When ready, serve it alongside a glass of cold white wine.
