Pumpkin spice pie

It’s autumn and that means it’s time to dust off your Uggs, take out your puffy vests and mittens; yes, it’s time to get cozy by the bonfire and drink some cider; take in the breathtaking beauty of the changing leaves and get your pumpkin spice latte for a limited time only!

Yes, apart from Halloween, and crisp air the beginning of the NFL season and well, everything else that Autumn has to offer, pumpkin pie has to be somewhere on the list of things authentically autumnal.   The humble pumpkin pie in all her sweet savoury glory is one of the most delicious and understated of all the pies but for some, (this writer included) it’s all we can think of, come Autumn. So while you’re out looking for the best carving pumpkin keep an eye out for a sugar pumpkin or two and make some pies.

Pumpkin Spice Pie!


1 medium sugar pumpkin (about 3 pounds)

Canola oil.

Easy as pie, Pie Crust:

Just go buy some, they’re cheap, it’s easy. (it’s ok)


One 14-ounce can sweetened condensed milk

1/2 cup whipping cream

2 tablespoons cornstarch

2 tablespoons molasses

2 tablespoons canola oil

1 tablespoon ground cinnamon

1 teaspoon ground ginger

3 large eggs


For the pumpkin:

Preheat the oven to 375 degrees F.

Prepare your pumpkin by remove the stem and scraping out the insides. Keep the seeds! You can season and bake them later for a tasty and healthy snack

Cut the pumpkin in half and lay the pieces cut-side down on a baking sheet lined with aluminum foil. Rub canola oil all over the skin and bake for about an hour.

Let it cool.

For the filling:

Scoop out the pulp from the pumpkin and puree in a food processor until smooth. Should yield about 4 cups

Add the condensed milk, cream, cornstarch, molasses, canola oil, cinnamon, ginger, salt and eggs and combine thoroughly.

Pour the filling into the crust and bake until the filling is set in the center, about 1 hour.

Transfer the pie to a rack to cool

Serve a room temperature or chilled, with or without whipped cream. A real enthusiast (this writer included) would eat it from the floor.

Any leftovers will keep nicely in the Vacuvita home base for eventual snacking.
