Classic marinara sauce for busy days

Marinara is an Italian sauce that originated in Naples, usually made with tomatoes, garlic, herbs, and onions. Its many variations can include the addition of capers, olives, spices, and always with a dash of wine.

Ingredients

2 (400g) cans stewed tomatoes

1 (500ml) can tomato

1 bunch chopped fresh parsley

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/4 teaspoon ground black pepper

6 tablespoons olive oil

1 finely diced medium sized onion

1/2 cup white wine

How it’s made

1- In a food processor place stewed tomatoes, tomato paste, chopped parsley, minced garlic, oregano, salt, and pepper. Blend until smooth.

2- In a large skillet over medium heat sauté the finely chopped onion in olive oil for 2 minutes. Add the blended tomato sauce and white wine.

4- Simmer for 30 minutes, stirring occasionally.

Once your sauce is cooled you can portion it into the reusable Vacuvita bags. To store it just lay the bags flat in the freezer. Doing this cuts down on the defrosting time. Properly sealed and frozen, some foods can last for several months.

Reheating is simple, you can choose your microwave or a pan if you wanted to add to your sauce and in the time it used to take to order a pizza you can have a fresh healthy expertly prepared meal. Once you have a nice basis sauce the only limit is your imagination.
