Classic marinara sauce for busy days

We all lead busy lifestyles in one way or another. The world is getting smaller and competition is getting tougher and we all have to put in the hours to make the difference. One of the things that is first to go in the name of convenience is a healthy meal, with most people opting to order out instead of cooking at the end of a long day, or in between dance lessons and hockey practice. “Let’s just order pizza.” has become the mantra of many working households.

Marinara is an Italian sauce that originated in Naples, usually made with tomatoes, garlic, herbs, and onions. Its many variations can include the addition of capers, olives, spices, and always with a dash of wine.


2 (400g) cans stewed tomatoes

1 (500ml) can tomato

1 bunch chopped fresh parsley

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/4 teaspoon ground black pepper

6 tablespoons olive oil

1 finely diced medium sized onion

1/2 cup white wine

How it’s made

1- In a food processor place stewed tomatoes, tomato paste, chopped parsley, minced garlic, oregano, salt, and pepper. Blend until smooth.

2- In a large skillet over medium heat sauté the finely chopped onion in olive oil for 2 minutes. Add the blended tomato sauce and white wine.

4- Simmer for 30 minutes, stirring occasionally.

Once your sauce is cooled you can portion it into the reusable Vacuvita bags. To store it just lay the bags flat in the freezer. Doing this cuts down on the defrosting time. Properly sealed and frozen, some foods can last for several months.

Reheating is simple, you can choose your microwave or a pan if you wanted to add to your sauce and in the time it used to take to order a pizza you can have a fresh healthy expertly prepared meal. Once you have a nice basis sauce the only limit is your imagination.
